Does anybody know a good recipe for Mango salad dressing?

I had a delicious salad at a Mexican restaurant with grilled shrimp, mango, avocado, corn… Etc, and it had a home made mango dressing but it wasn’t creamy and weighed down. Does anybody know any healthy mango salad dressing recipies?

Maybe one of these recipes will help you:

Mango dressing for green salads

1 alphonso mangoes, washed and diced
2 small dried red chilies, crushed
1 teaspoon honey
1/2 cup lime juice
1 teaspoon dried lime, powder

1.Blend everything in a blender till smooth.
2.Pour over your green salad and serve.

Shrimp & Avocado Salad With Mango Dressing

SERVES 6

SHRIMP

1 lemon, halved
6 cups water
1 small onion, sliced
2 tablespoons kosher salt
1 scotch bonnet pepper or habanero pepper, halved
1 tablespoon grated fresh ginger
12 ounces lager beer, such as Red Stripe (1 bottle)
2 lbs large shrimp, shelled and deveined

DRESSING

1 mango, peeled and finely diced (1 1/2 cups)
1/4 cup rice vinegar
2 tablespoons fresh lime juice (please, not the bottled stuff)
1 teaspoon Dijon mustard
1/2 cup canola oil
1 tablespoon chopped cilantro
1/2 teaspoon finely grated lime zest
1/4 teaspoon minced scotch bonnet pepper or minced habanero pepper
1/4 cup thinly sliced red onion
salt & freshly ground black pepper
2 Hass avocadoes, sliced
lime wedge, for serving

1.PREPARE THE SHRIMP:.
2.Squeeze the lemon halves into a large saucepan then add them to the pan.
3.Add the water, onion, salt, Scotch bonnet, ginger and beer and bring to a boil.
4.Cover and simmer for 15 minutes.
5.Add the shrimp and cook for 3 minutes, just until pink.
6.Drain the shrimp and spread on a platter.
7.Refrigerate until chilled.
8.Halve the shrimp horizontally.

9.MAKE THE DRESSING:.
10.In a blender, combine 1/3 cup of the diced mango with the vinegar, lime juice and mustard and puree until smooth.
11.With the machine on, add the oil in a thin stream and blend until very smooth.
12.Add the cilantro, lime zest and minced Scotch bonnet and pulse just to combine.
13.Transfer the dressing to a large bowl.
14.Add the shrimp, red onion and the remaining mango and season with salt and pepper.
15.Toss to coat.
16.Arrange the avocado slices around a large platter.
17.Mound the shrimp salad in the center and garnish with lime wedges.
18.Serve right away.
19.*The cooked shrimp and mango dressing can be refrigerated separately overnight. Toss the shrimp with the mango dressing before serving.

One of the most common questions I receive is how to make healthy, low fat dressings salads that actually taste good!

Well, these 5 recipes raw taste good enough for me, so I thought I'd share with you! : D

# 1: Spicy tomato dressing

  • 2 cups pineapple
  • 1 cup tomato
  • 1 cup cucumber

Mix and pour over your favorite vegetables!

# 2: Ridiculously Delicious Dressing

  • 2 medium tomatoes
  • Ataulfo 1 (yellow) mango *
  • A handful fresh cilantro

* Mango Ataulfo are much creamier than the more common or Kent Tommy varieties. I think they are much tastier too.

Cut the tomatoes into quarters and place in blender. Peel and chop mango into chunks, about the size of the rooms of tomato. Place the mango pieces in the blender. Chop the cilantro and place in blender.

Lightly pulse. Do not mix too much or received bubbly and disgusting.

I especially love to eat this as a sauce over zucchini or yellow squash spiralized. You simply can not win the summer mango cilantro-tomato combo!

# 3: Not-So-Pretty Pistachio Dressing

  • 2 medium tomatoes
  • Half of 1 medium cucumber
  • 1 oz pistachios

Chop and mix all.

I like to pour over romaine and cucumber spiralized. It's a nice tasty alternative to regular dressings fresh and fruity.

And you know the reason for the name once you make the recipe. ;)

# 4: Orange You Glad Avocado save you?

  • One half of a Hass avocado
  • 8 oz orange juice

OD and Mash avocado with a fork to combine. Mix shredded cabbage, celery, and / or a healthy salad of raw carrots.

This is really a 80/10/10 diet recipe I tried last winter, when Valencia oranges are delicious in season. I'm hoping to try again very soon!

# 5: Fully-Less Chicken Chicken Salad

  • 2 cups red grapes, black or concord
  • 1 cup chopped fennel leaves
  • Fresh dill

Putting the grapes in the first, and then mix.

This recipe was actually inspired by traditional chicken salad, which usually takes the grapes, celery and dill. replaced it with celery, fennel because I like the anise flavor. If you can not find fennel or do not like the taste, feel free to use celery instead.

From here you can cut all the ingredients instead of eating the mixture and mix their own salad for a more authentic "chicken".
